Express Yourself: Favourite Family Recipe


The Express Yourself Weekly Meme is hosted Bouquet Of Books and Entertaining Interests.  This week's topic is: what's your favourite family recipe/meal?

This was a hard one for me to choose because I love so many things but in the end I went with the first thing that had come to my mind when I read the question and that was lasagna rolls.  I think my mom first got this recipe from one of those mail subscription recipe clubs back in the early nineties, you know, they sent you a box and then recipes every month to fill it up?

Does stuff like that still exist or is it all Pinterest and food bloggers?  Anyway, these things are just to die for.  They are probably a million calories but they are quicker than lasagna and they are made with Alfredo sauce so Ace will eat them.  (he won't do red sauce)

Blah! Have you ever found that when you have been making something from your head for years that when you try to write it down your memory draws a blank?

Lasagna Rolls

Ingredients:

1 jar Alfredo Sauce
1 package lasagna noodles
1 package ricotta cheese
3/4 cup shredded mozzarella cheese
1 package baby spinach
1lb lean ground turkey (or hamburger or sausage)

Directions:

Preheat oven to 350 degrees.
Cook noodles according to package directions and set aside.
Spoon some of your sauce into the bottom of a casserole dish.
Cook meat, seasoning to taste and drain.
Saute spinach and mix both together with ricotta cheese.
Lay out lasagna noodles and line with meat and cheese mixture.
Carefully roll your noodles.
Lay into casserole dish seam side down.
Cover with remaining sauce and shredded cheese.
Bake for 25-30 mins.

Serves 6
